Poulet Bleu is named for what you notice first — legs of a distinctive blue. It is a unique, home-grown breed, raised by Bernie Nash of Mad Hatcher Poultry on a small, family-run Washington farm.

The North American Blue Foot is decidedly reminiscent of the legendary French poulet de Bresse — a distinct, deep and robust flavor with a satisfying, naturally meaty texture.

Chefs, distributors & wholesale

Chefs with an assigned distributor order through that distributor. Approved distributors order on behalf of their customers. Chefs without distributor coverage can apply for direct wholesale.

The waitlist

First come, first served — and it stays that way.

A whole-chicken allocation is limited, so reservation order matters. Retail reservations require a $15 per bird non-refundable deposit, with a two-bird minimum — a $30 minimum deposit. Your place is set once that deposit clears.

    Your chicken ships frozen, via UPS in an insulated cooler. Dispatch waits until the remaining balance is settled.

Public names on the reservation list show first name and last initial only, and you can appear anonymously. Registering your interest today does not reserve stock or establish a paid queue position — reservations begin when ordering opens.
