Poulet Bleu grew out of a small family-run chicken farm in Washington state — and stayed family-run. What began in one modest home has moved to a larger one, with room to grow.

Poulet Bleu started as a small, family-run chicken farm in Washington state. It is still a small, family-run farm — that part has never changed.
What changed is where it lives. The original home was outgrown, so the operation moved to a larger one with room to grow. The farm remains family-run in its new home.

The breed
The North American Blue Foot
A unique, home-grown breed — initially bred by the Canadian poultryman Peter Thiessen, and raised today by Bernie Nash of Mad Hatcher Poultry.
Reminiscent of poulet de Bresse
This North American breed is reminiscent of the celebrated French poulet de Bresse.

Bernie Nash grew up in a farming family and has spent his life in agriculture, with a particular passion for poultry. He founded Mad Hatcher Poultry in 2007.
His friendship with the Canadian breeder Peter Thiessen helped bring the North American Blue Foot into his care — the bird that became Poulet Bleu.
